When I made it, I doubled it, but didn't double the beef broth. It was plenty soupy that way. You can also add as much heat as you want, with jalapenos or Tabasco sauce. The regular recipe serves about 6 and doubled, 12, which can be reheated in a crock pot to take to gatherings. I took it to the trunk-or-treat, and it was gone.
Yum! This looks close to my chili, but I don't add beef broth but I think I might add some next time because it is usually just a bit too thick.

1 lb. Jimmy Dean Italian sausage (ground breakfast sausage also works, I tried it)
1 can Ro-tel
1 8oz package cream cheese
I've put in crushed red pepper flakes for a little more spice also
Brown the sausage, drain and throw all the ingredients in a crock pot and stir occasionally until the cream cheese is melted and it mixes well. To speed it up, I've also warmed everything up in the microwave and then put it in the crock pot to keep it warm. We love it with the Fritos scoops chips. I double it and make this on movie night!
